Delicious and Fragrant Stir-Fried Morning Glory with Garlic: Crispy, Tender, and Vibrant Green
Ingredients
1/2 tablespoon seasoning, a few cloves of garlic, washed morning glory drained and 50ml filtered water, stir-fry pot (not pan).
How to choose fresh garlic
Choose garlic bulbs with smooth, intact skin and few or no ridges, as garlic with many ridges will have smaller cloves.
Choose garlic bulbs that are a medium size but feel firm in your hand, avoid bulbs that are discolored, soft, watery or sprouting.
When you peel off the papery skin of the garlic clove, if you see green or yellow color, do not choose it as they have a poor flavor and a short shelf life.
Instructions
Heat up the pot, add enough oil (not too much, just enough to coat the pot a little). Fry the garlic until golden, then remove. You can skip this step if you don’t eat garlic.
Blanch the morning glory before stir-frying. This step helps the morning glory stay crispy, fresh and green:
Pour water into a pot, bring to a boil with a pinch of salt and cooking oil (salt helps retain the green color of the vegetables, while the oil makes the surface of the leaves softer). When the water boils, quickly add the morning glory (in small batches) and blanch for about 15-20 seconds. Transfer immediately to a bowl of ice water for a few minutes. If you don’t have ice water, you can rinse under cold tap water. Don’t think this step takes time, it actually saves a lot of stir-frying time, especially the chilled water helps keep the vegetables fresh and green, yet crispy and enticing.
– Add cooking oil to a hot pan, add minced garlic and fry until fragrant. Then turn up the heat, add the morning glory to the pan and quickly stir, add the prepared sauce on top. Stir the vegetables evenly to absorb the seasonings and cook evenly for 1-2 minutes, depending on the amount of vegetables. Taste and adjust the seasonings if desired.
This step is crucial to help keep the morning glory green and vibrant. Because if you stir too much, the vegetables will look crushed. Covering the pan will help retain the moisture and the vitamins.
After 1 to 2 minutes depending on the tenderness of the vegetables, you need to remove the lid, gently stir the vegetables a few times, then transfer them to a plate and sprinkle the fried garlic on top.
Many people have the habit of boiling vegetables before stir-frying, which will make them less crunchy and lose their vitamins.
